Slow Cooker Mediterranean Chicken (Print Version)

# Ingredients:

01 - 4 boneless, skinless chicken breasts
02 - 1 can (14 oz) diced tomatoes, undrained
03 - 1 cup Kalamata olives, pitted and halved
04 - 1/2 cup red onion, sliced
05 - 4 cloves garlic, minced

→ Seasonings

06 - 1 tsp dried oregano
07 - 1 tsp dried basil
08 - 1/2 tsp red pepper flakes (optional)
09 - Salt and pepper, to taste

→ For serving

10 - Fresh parsley, for garnish
11 - Cooked couscous or quinoa

# Instructions:

01 - Place the chicken breasts in the slow cooker. Season with salt, pepper, oregano, basil, and red pepper flakes.
02 - Add the diced tomatoes, olives, red onion, and garlic on top of the chicken.
03 - Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
04 - Serve the chicken with the sauce over cooked couscous or quinoa, garnished with fresh parsley.
