Drain and rinse one can of chickpeas. Melt the dark chocolate in the microwave or on the stovetop using a double boiler.

Add the chickpeas, nut butter, and melted chocolate chips to a food processor or blender. Blend for about 45-60 seconds until all ingredients are well incorporated.

Using a cookie scoop, portion the mixture onto a parchment-lined baking sheet. Freeze for 15-20 minutes to firm up. Remove from freezer, roll into smooth balls, then return to freezer for another 10 minutes.

While truffles are chilling, melt the additional cup of dark chocolate chips with coconut oil for the coating.

Remove the truffles from the freezer and dip each one in the melted chocolate coating. Place back onto the parchment-lined baking sheet.

If desired, sprinkle chosen toppings over the truffles while the chocolate coating is still wet.

Return truffles to the freezer until completely hardened, then transfer to the refrigerator for storage.
