Heat olive oil in a large pan over medium-high heat. Add diced onion along with a couple pinches of salt and pepper. Cook, stirring frequently for 4 minutes until softened.

Add sliced garlic, chili powder, cumin, paprika, garlic powder, dried oregano, and a couple pinches of salt and pepper. Cook, stirring frequently for 30 seconds until fragrant.

Add ground beef and cook, crumbling with a spatula until completely browned and cooked through.

Stir in salsa and black beans until fully incorporated.

Cover the taco meat mixture with shredded cheese and bake, uncovered, for 5 minutes or until the cheese is completely melted.

Add a layer of Fritos corn chips, followed by a layer of shredded lettuce, then a layer of diced tomatoes.

Garnish with sour cream, sliced jalapeno, and additional toppings as desired. Serve immediately while still warm.
