Walking Taco Casserole (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 white onion, diced
03 - 6 cloves garlic, thinly sliced
04 - 1 lb. ground beef
05 - 1 (15 oz.) can black beans, drained and rinsed
06 - 1 tablespoon chili powder
07 - 2 teaspoons cumin
08 - 1 teaspoon paprika
09 - 1 teaspoon garlic powder
10 - 1 teaspoon oregano
11 - 1/2 cup restaurant style salsa
12 - 8 oz. shredded cheese
13 - 3 cups Fritos corn chips

→ Toppings

14 - 1 cup shredded lettuce
15 - 1 cup diced tomato

→ Garnish

16 - Sliced green onion
17 - Sliced jalapeno
18 - Sour cream
19 - Fresh chopped cilantro
20 - Taco sauce
21 - Sliced black olives

# Instructions:

01 - Heat oven to 350°F (175°C).
02 - Heat olive oil in a large pan over medium-high heat. Add diced onion along with a couple pinches of salt and pepper. Cook, stirring frequently for 4 minutes until softened.
03 - Add sliced garlic, chili powder, cumin, paprika, garlic powder, dried oregano, and a couple pinches of salt and pepper. Cook, stirring frequently for 30 seconds until fragrant.
04 - Add ground beef and cook, crumbling with a spatula until completely browned and cooked through.
05 - Stir in salsa and black beans until fully incorporated.
06 - Cover the taco meat mixture with shredded cheese and bake, uncovered, for 5 minutes or until the cheese is completely melted.
07 - Add a layer of Fritos corn chips, followed by a layer of shredded lettuce, then a layer of diced tomatoes.
08 - Garnish with sour cream, sliced jalapeno, and additional toppings as desired. Serve immediately while still warm.
