Strawberry Spinach Salad (Print Version)

# Ingredients:

β†’ Balsamic Dressing

01 - 1 cup balsamic vinegar
02 - ΒΌ cup honey or brown sugar

β†’ Spinach Strawberry Salad

03 - 300 g baby spinach, fresh
04 - 3 cups strawberries, cleaned, hulled and sliced
05 - 1 cup blueberries
06 - β…“ cup feta cheese, crumbled
07 - 1 cup pecans, toasted, some chopped

# Instructions:

01 - In a small saucepan, heat balsamic vinegar and honey over medium heat. Bring to a gentle boil, reduce heat to simmer and cook, stirring, until the mixture thickens and reduces by about half (approximately 10 minutes).
02 - Remove from heat and pour the balsamic glaze into a heat-proof bowl to cool. The glaze will thicken further as it cools. Ideal consistency should coat the back of a spoon without becoming overly thick.
03 - In a large bowl, combine all salad ingredients except the pecans. Toss gently to combine.
04 - Divide the salad into individual serving bowls. Top each serving with whole and chopped toasted pecans. Drizzle with the prepared balsamic glaze.
