Spicy Southwest Turkey Burgers (Print Version)

# Ingredients:

→ Turkey Patties

01 - 1 lb ground turkey (93% lean)
02 - 1 tsp chili powder
03 - 1/2 tsp cumin
04 - 1/2 tsp smoked paprika
05 - 1/2 tsp garlic powder
06 - 1/4 tsp onion powder
07 - 1/4 tsp cayenne pepper
08 - 1/2 tsp salt
09 - 1/4 tsp black pepper

→ Southwest Sauce

10 - 1/4 cup mayonnaise
11 - 1 tbsp lime juice
12 - 1 tbsp chopped cilantro
13 - 1 tsp chili powder
14 - 1/2 tsp cumin
15 - 1/4 tsp smoked paprika
16 - Salt and pepper to taste

→ Assembly

17 - 4 burger buns
18 - 1 avocado, sliced
19 - 1 tomato, sliced
20 - 4 leaves of lettuce
21 - 1 small red onion, sliced
22 - 1 white onion, sliced (optional)

# Instructions:

01 - In a large bowl, combine ground turkey with chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix gently until just combined, avoiding overworking the meat.
02 - Divide the mixture into 4 equal portions and shape into patties approximately 1cm thick. Create a small indentation in the center of each patty to prevent bulging during cooking.
03 - Place formed patties on a plate and refrigerate for 30 minutes to help them firm up and hold their shape during cooking.
04 - Preheat grill or skillet over medium-high heat. Cook patties for 5-7 minutes per side until they reach an internal temperature of 74°C (165°F) and are no longer pink in the center.
05 - While patties cook, combine mayonnaise, lime juice, chopped cilantro, chili powder, cumin, smoked paprika, salt, and pepper in a small bowl. Stir until well integrated.
06 - Place burger buns cut-side down on the grill or in a skillet over medium heat for 1-2 minutes until lightly golden brown.
07 - Spread southwest sauce on the bottom bun, then layer with cooked turkey patty, avocado slices, tomato, lettuce, and onion. Cap with the top bun and serve immediately.

# Notes:

01 - The small indentation in the patties prevents them from puffing up during cooking.
02 - For juicier burgers, avoid pressing down on the patties while cooking.
