Slow Cooker Stuffed Peppers (Print Version)

# Ingredients:

01 - 4 large bell peppers, any color
02 - 1 lb ground beef or turkey
03 - 1 cup cooked rice, white or brown
04 - 1 can (15 oz) diced tomatoes, drained
05 - 1 small onion, chopped
06 - 2 cloves garlic, minced
07 - 1 tsp Italian seasoning
08 - Salt, to taste
09 - Pepper, to taste
10 - 1 cup shredded cheese, cheddar or mozzarella
11 - Fresh parsley, for garnish

# Instructions:

01 - Cut the tops off the bell peppers and remove the seeds. Set aside.
02 - In a skillet, brown the ground meat with onions and garlic until fully cooked. Drain excess fat.
03 - In a bowl, combine the cooked meat, rice, diced tomatoes, Italian seasoning, salt, and pepper.
04 - Stuff each bell pepper with the meat mixture and place them upright in the slow cooker.
05 - Pour a little water into the bottom of the slow cooker to help steam the peppers. Cover and cook on low for 6-7 hours or high for 3-4 hours.
06 - In the last 15 minutes of cooking, sprinkle cheese on top of each pepper and cover until melted. Garnish with fresh parsley before serving.
