Peel, core, and quarter the apples. Cut each quarter into 4 equal slices. Place all apple slices into a 6-quart slow cooker.

In a bowl, combine tapioca starch, cinnamon, nutmeg, cloves, and sea salt. Add maple syrup and whisk until tapioca has completely dissolved. Incorporate vanilla extract and lemon juice.
