Roasted Garlic Goat Cheese Dip (Print Version)

# Ingredients:

→ Dip Base

01 - 2 heads garlic
02 - 4 teaspoons olive oil, divided
03 - Kosher salt
04 - Fresh cracked pepper
05 - 10 oz. goat cheese, room temperature
06 - 1/2 cup shredded Parmesan cheese
07 - 3 tablespoons whole milk
08 - 2 teaspoons fresh thyme leaves
09 - 1/2 cup grape tomatoes

→ For Serving

10 - Sliced French bread or crostini for dipping

# Instructions:

01 - Heat oven to 400 degrees. Slice the top off of each head of garlic. Drizzle the cut side of each head with 1 teaspoon olive oil and season with salt and pepper.
02 - Place garlic heads cut side down on a baking sheet. Roast for 30 minutes or until the cloves of garlic are soft. Allow to cool until you can handle it.
03 - Turn oven temperature down to 350 degrees.
04 - Add goat cheese, Parmesan, milk, and thyme to a medium bowl. Squeeze cloves of roasted garlic into the bowl and stir to combine all ingredients together. Season to taste with salt and pepper.
05 - Lightly oil a small baking dish with 1 teaspoon of olive oil. Then spread goat cheese mixture in an even layer in the baking dish.
06 - Top goat cheese with tomatoes, then drizzle tomatoes with remaining teaspoon olive oil and season with salt and pepper.
07 - Bake for 20 minutes or until warmed through. Then broil for 1-2 minutes to brown the top.
08 - Garnish with a drizzle of olive oil and fresh thyme if desired. Serve warm with sliced French bread and crackers.

# Notes:

01 - For the creamiest texture, ensure the goat cheese is completely at room temperature before mixing.
02 - The dip can be assembled up to a day ahead and refrigerated; just bring to room temperature before baking.
