If needed, toast the sesame seeds in a dry pan until golden. Line a baking tray with aluminum foil. Preheat oven to 218°C (425°F).

Place halved Brussels sprouts in a large mixing bowl. Add oil, salt, and pepper. Toss thoroughly to ensure even coating.

Arrange seasoned Brussels sprouts on the prepared baking tray. Bake at 218°C for 20 minutes, flipping every 5 minutes to ensure even browning.

Remove from oven and let cool for 5 minutes. Drizzle with balsamic vinegar and honey, then mix well. Sprinkle with roasted sesame seeds before serving.
