Easy Rhubarb Compote (Print Version)

# Ingredients:

01 - 3 cups (400g) chopped rhubarb
02 - ½ cup (100g) sugar
03 - ½ cup water
04 - 2 tablespoons orange juice or water

# Instructions:

01 - Add all ingredients to a pot. Bring to the boil, then reduce the heat and simmer for 5 minutes or until soft (but the rhubarb hasn't completely broken down).
02 - Allow to cool slightly before serving. This rhubarb compote pairs wonderfully with oatmeal, yogurt, custard, cheesecake, waffles, ice cream and other desserts.

# Notes:

01 - The compote should maintain some texture - avoid overcooking the rhubarb to preserve its structure.
