Grate the raw butternut squash and pat dry with paper towels. Place in a medium bowl, then add the chopped onion, egg, parmesan cheese, flour, salt, pepper, and parsley. Mix thoroughly until well combined.

Form mixture into patties or drop by spoonfuls into the hot pan and lightly flatten with the back of a spoon to form approximately 6 fritters.

Heat olive oil in a medium frying pan over medium heat. Cook fritters in batches of 3 until golden brown on both sides, approximately 3-4 minutes per side.

Transfer cooked fritters to a paper towel-lined plate to absorb excess oil. Serve immediately while hot and crispy.
