# Ingredients:

→ Main Ingredients

01 - 2 cups grated butternut squash
02 - ½ onion, finely chopped
03 - 1 large egg
04 - ¼ cup all-purpose flour
05 - ¼ cup freshly grated parmesan cheese
06 - ¼ teaspoon salt
07 - 1-2 dashes hot pepper flakes or black pepper
08 - ½-1 teaspoon dried parsley (or ½-1 tablespoon fresh chopped)
09 - 1-2 tablespoons olive oil for frying

# Instructions:

01 - Grate the raw butternut squash and pat dry with paper towels. Place in a medium bowl, then add the chopped onion, egg, parmesan cheese, flour, salt, pepper, and parsley. Mix thoroughly until well combined.
02 - Form mixture into patties or drop by spoonfuls into the hot pan and lightly flatten with the back of a spoon to form approximately 6 fritters.
03 - Heat olive oil in a medium frying pan over medium heat. Cook fritters in batches of 3 until golden brown on both sides, approximately 3-4 minutes per side.
04 - Transfer cooked fritters to a paper towel-lined plate to absorb excess oil. Serve immediately while hot and crispy.

# Notes:

01 - These fritters are most crispy when served immediately after cooking.
02 - Butternut squash can be substituted with other varieties of pumpkin or winter squash.
