Pesto Chicken Cottage Cheese Bowl (Print Version)

# Ingredients:

01 - 2 cups fresh basil leaves, lightly packed
02 - ½ cup low-fat (2% milkfat) cottage cheese
03 - 2 ½ tablespoon grated parmesan, divided
04 - 1 ½ tablespoons pine nuts
05 - 1 tablespoon extra-virgin olive oil
06 - 1 clove garlic, minced
07 - 1 teaspoon lemon juice (optional)
08 - salt and pepper to taste
09 - ¼ cup red bell pepper, diced (optional)
10 - ⅔ cup rotisserie chicken, shredded
11 - 2 tablespoons shredded mozzarella

# Instructions:

01 - In a food processor, combine fresh basil, garlic, pine nuts, 2 tablespoons grated parmesan, olive oil and low-fat cottage cheese. Pulse until smooth and thoroughly combined. Add a squeeze or teaspoon of lemon juice (optional). Season with salt and pepper to taste.
02 - In a microwave-safe bowl topped with a microwave-safe plate, heat diced bell pepper for 1 minute (optional).
03 - When done, combine cottage cheese pesto, diced bell pepper and shredded rotisserie chicken and stir until well combined. Place bowl in microwave and heat for 1 minute. Remove and stir.
04 - Evenly sprinkle shredded mozzarella and remaining grated parmesan (½ tablespoon) over the top. Heat for another minute or so until cheese is melted (or almost melted) and mixture is thoroughly heated. Serve immediately.
