Parmesan Garlic Roasted Carrots (Print Version)

# Ingredients:

→ Vegetables

01 - 2 pounds carrots, washed, scrubbed, diagonally cut into 3-inch pieces

→ Seasoning and Flavoring

02 - 4 tablespoons butter, melted
03 - 4 cloves garlic, minced
04 - 1 teaspoon Italian seasoning
05 - 1/4 teaspoon salt, or to taste
06 - 1/4 teaspoon freshly ground black pepper

→ Toppings

07 - 1/3 cup grated Parmesan cheese
08 - 1/4 cup chopped fresh parsley

# Instructions:

01 - Preheat oven to 425˚F.
02 - Grease a rimmed baking sheet with cooking spray or line it with foil and set aside.
03 - Place prepared carrots in a large mixing bowl and set aside.
04 - Melt the butter in the microwave. Once melted, add minced garlic, Italian seasoning, salt, and pepper to the melted butter and whisk until thoroughly combined.
05 - Pour the butter mixture over the carrots and toss to coat. Add grated Parmesan cheese and mix until combined.
06 - Transfer carrots to the baking sheet, arranging them in a single layer. Bake for 20 to 25 minutes or until tender, stirring halfway through cooking.
07 - Remove from the oven. Taste for seasonings and adjust as needed.
08 - Sprinkle with fresh parsley and serve immediately.
