Oven Baked Salmon in Foil (Print Version)

# Ingredients:

01 - 4 salmon fillets (450-700g)

→ Vegetables

02 - 450g asparagus
03 - 225g cherry tomatoes, halved

→ Seasonings

04 - 1 tsp salt
05 - 1/2 tsp pepper
06 - 1/2 tsp red pepper flakes
07 - 4 tbsp olive oil
08 - 3 tbsp fresh lemon juice
09 - 1 tsp lemon zest
10 - 3 garlic cloves, minced
11 - 2 tbsp fresh parsley, chopped

# Instructions:

01 - Preheat oven to 200°C. Cut heavy-duty aluminum foil into 30 x 35 cm rectangles and lay them out on the counter.
02 - Place a salmon fillet in the center of each foil sheet. Divide asparagus and tomatoes evenly around the salmon. Sprinkle with salt, pepper, and red pepper flakes.
03 - In a small bowl, whisk together olive oil, lemon juice, lemon zest, and minced garlic.
04 - Brush half of the marinade onto the salmon fillets. Pour the remaining mixture over the asparagus and tomatoes.
05 - Fold the foil over the fish and pinch the edges together to seal, leaving room for steam circulation. Place packets on a rimmed baking sheet.
06 - Bake for 15-20 minutes, until salmon is cooked through and flakes easily with a fork.
07 - Carefully unwrap the foil packets and garnish with lemon slices and fresh parsley before serving.

# Notes:

01 - For best results, ensure all salmon fillets are similar in thickness for even cooking.
02 - The foil packets can be prepared up to 4 hours ahead and refrigerated until ready to bake.
