# Ingredients:

01 - 3 cups mashed potatoes
02 - 1 cup shredded cheese (cheddar, mozzarella, or preferred melting cheese)
03 - 1/4 cup all-purpose flour
04 - 2 tablespoons Parmesan cheese
05 - 2 tablespoons fresh chives, chopped
06 - 1/3 cup sour cream
07 - Salt to taste
08 - 2 eggs, beaten

# Instructions:

01 - Preheat your oven to 200°C (400°F) and thoroughly grease a muffin tin.
02 - In a mixing bowl, beat the eggs and mix in the sour cream until well combined.
03 - Add the shredded cheese, Parmesan cheese, chopped chives, and a pinch of salt to the egg mixture. Mix thoroughly.
04 - Gently fold in the mashed potatoes and flour, ensuring the mixture is evenly combined without overworking.
