Hearty Beef Bean Chili (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 small yellow onion, diced
03 - 5 cloves garlic, minced
04 - 1 pound ground beef
05 - 1 tablespoon tomato paste

→ Spices

06 - 2 tablespoons chili powder
07 - 1 tablespoon cumin
08 - 2 teaspoons brown sugar
09 - 1/2 teaspoon garlic powder
10 - 1/2 teaspoon onion powder
11 - 1/2 teaspoon paprika
12 - 1/2 teaspoon dried oregano
13 - 2-3 teaspoons diced chipotles in adobo
14 - Kosher salt
15 - Fresh cracked pepper

→ Main Ingredients

16 - 2 (15 ounce) cans dark kidney beans, drained and rinsed
17 - 1 (15 ounce) can light kidney beans, drained and rinsed
18 - 4 cups V8 or tomato-based vegetable juice

→ Garnish

19 - Fritos or homemade tortilla strips
20 - Shredded cheddar cheese
21 - Fresh chopped cilantro
22 - Sliced green onion
23 - Sour cream

# Instructions:

01 - Heat olive oil in a large pot over medium heat. Add diced onion with a couple pinches of salt and pepper. Cook, stirring frequently for 6-8 minutes until super soft and almost starting to brown.
02 - Add minced garlic and cook for 1 minute, stirring frequently.
03 - Add ground beef and cook, crumbling with a spatula until cooked through. Use the fat from the beef to deglaze the bottom of the pan and scrape all the flavorful bits off.
04 - Add tomato paste, chili powder, cumin, brown sugar, garlic powder, onion powder, paprika, dried oregano, chipotles in adobo, and a couple large pinches of salt and pepper. Cook, stirring frequently for 1 minute.
05 - Add dark and light kidney beans, V8 juice and a couple large pinches of salt and pepper. Bring to a simmer over medium-high heat.
06 - Reduce heat to low and simmer, covered for 30 minutes, stirring occasionally. Season to taste with salt and pepper.
07 - Serve with Fritos or tortilla strips, shredded cheese, cilantro, green onion, and sour cream.

# Notes:

01 - For best results, allow chili to simmer longer for deeper flavor development.
02 - Adjust the amount of chipotles in adobo to control spice level.
