Frozen Dragon Fruit Pina Colada (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1/2 cup fresh pineapple chunks
02 - 1/2 cup frozen pink dragon fruit
03 - 2.5 oz canned coconut milk
04 - 0.5 oz agave syrup
05 - 1/2 cup pineapple juice
06 - Handful of ice

→ Garnish

07 - Unsweetened coconut flakes, for toasting
08 - Pineapple leaf, for garnish
09 - Agave syrup, for rim coating

# Instructions:

01 - Toast the unsweetened coconut flakes in a sauté pan over medium-low heat for 3-5 minutes until golden brown. Watch carefully as they can burn quickly. Remove immediately from pan once toasted.
02 - Add fresh pineapple chunks, frozen pink dragon fruit, coconut milk, agave syrup, pineapple juice, and ice to a blender. Blend until smooth and creamy.
03 - Dip the rim of your glass in agave syrup and then into the toasted coconut flakes. Pour the blended mixture into the glass, garnish with a pineapple leaf and serve immediately.

# Notes:

01 - For an adult version, add 1-2 oz of rum to the blender with the other ingredients.
02 - The vibrant pink color comes naturally from the dragon fruit, no artificial coloring needed.
