French Grated Carrot Salad (Print Version)

# Ingredients:

01 - 450g carrots, peeled
02 - 2 tablespoons extra-virgin olive oil
03 - 1 tablespoon freshly squeezed lemon juice, plus extra to taste
04 - 1/2 teaspoon kosher or sea salt
05 - 1/2 teaspoon Dijon mustard
06 - 1/4 teaspoon honey or sugar
07 - 2 tablespoons finely chopped fresh herbs (parsley, tarragon, chives, or chervil)

# Instructions:

01 - Grate the peeled carrots using a rotary grater or box grater.
02 - In a mixing bowl, whisk together the olive oil, lemon juice, salt, mustard, and honey or sugar until well combined.
03 - Add the grated carrots and chopped herbs to the dressing. Toss thoroughly to coat all ingredients. Taste and adjust seasoning with additional lemon juice or salt as needed.

# Notes:

01 - This classic French salad is best served slightly chilled. The flavors develop nicely if allowed to rest for 15-30 minutes before serving.
