Eggplant Parmesan Bake (Print Version)

# Ingredients:

01 - 2 medium eggplants, sliced into 1/4-inch rounds
02 - 2 cups marinara sauce (sugar-free if desired)
03 - 2 cups mozzarella cheese, shredded
04 - 1 cup grated Parmesan cheese
05 - 1 tablespoon olive oil
06 - 1 teaspoon Italian seasoning
07 - Salt and pepper to taste

# Instructions:

01 - Preheat your oven to 375°F (190°C).
02 - Brush eggplant slices with olive oil and season with salt, pepper, and Italian seasoning. Arrange them on a baking sheet and roast for about 20 minutes until slightly soft.
03 - In a baking dish, spread a layer of marinara sauce at the bottom. Add a layer of roasted eggplant, then sprinkle with mozzarella and Parmesan cheese. Repeat the layers until all ingredients are used, finishing with cheese on top.
04 - Bake for 30-35 minutes until the cheese is bubbly and golden brown.
05 - Let it cool for a few minutes before serving.
