Egg Roll in a Bowl (Print Version)

# Ingredients:

01 - 1 pound ground turkey (93% lean recommended, not 99% lean)
02 - 2 ½ tablespoons sesame oil, divided
03 - 1 large garlic clove, minced
04 - ½ cup scallions, sliced
05 - 1 cup mushrooms, chopped
06 - 3 ½ cups coleslaw mix
07 - 1 teaspoon ginger powder
08 - ½ teaspoon garlic powder
09 - Salt, to taste
10 - Freshly ground black pepper, to taste
11 - ¼ cup low-sodium soy sauce (tamari or coconut aminos can be substituted)

12 - Fresh scallions, sliced
13 - Sesame seeds
14 - Sriracha sauce

# Instructions:

01 - Heat 1 tablespoon sesame oil in a large skillet over medium heat. Add ground turkey, season with a pinch of salt and pepper, and cook for about 6 minutes, breaking up the meat with a spatula until no longer pink. Transfer cooked turkey to a bowl and set aside.
02 - In the same pan, heat another tablespoon of sesame oil over medium heat. Add minced garlic and brown for about 1 minute. Add scallions, mushrooms, coleslaw mix, ginger powder, garlic powder, salt and pepper. Cook for 5-7 minutes until vegetables soften.
03 - Return the cooked turkey to the pan. Add the remaining ½ tablespoon of sesame oil and soy sauce. Stir to combine all ingredients thoroughly and cook for an additional 2 minutes to allow flavors to meld.
04 - Serve hot as is or over steamed rice. Garnish with fresh scallions, sesame seeds, and a drizzle of Sriracha if desired.
