Egg Naan Toasts (Print Version)

# Ingredients:

01 - 1 tablespoon salted butter
02 - 2 eggs
03 - 3 tablespoons shredded parmesan cheese
04 - 1 mini naan (Stonefire brand recommended)
05 - Salt and freshly ground black pepper
06 - Red pepper flakes
07 - ¼ cup (10g) fresh arugula
08 - Preferred seasoning, to taste

# Instructions:

01 - Melt butter in a skillet over medium-low heat.
02 - Crack eggs into skillet and scramble them with the melted butter. Season with salt and pepper.
03 - When eggs are set but still somewhat loose, push to the side and add the naan to the pan to warm.
04 - Top naan with 2 tablespoons of Parmesan, then spoon scrambled eggs over the cheesy naan. Sprinkle remaining tablespoon of Parmesan and red pepper flakes on top.
05 - Cover skillet for 30 seconds to 1 minute until the naan bottom is toasted and the cheese is melted. Top with fresh arugula before serving.
