In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, beat together buttermilk, eggs, melted butter, and vanilla extract until well combined.

Gently fold the wet ingredients into the dry ingredients using a wooden spoon until just combined. Do not overmix - small flour lumps are acceptable.

Lightly coat a poffertjes griddle with non-stick cooking spray and heat to medium temperature.

Pour approximately 1 teaspoon of batter into each indentation of the griddle. Cook until bubbles form on the surface, then flip using a skewer or fork. Cook until golden brown, about 1-2 minutes per side.

Remove from the griddle and dust with powdered sugar. Serve with fresh berries, syrup or other preferred toppings.
