Dutch Mini Pancakes Poffertjes (Print Version)

# Ingredients:

01 - 1½ cups all-purpose flour
02 - 2 tablespoons sugar
03 - 1½ teaspoons baking powder
04 - 1 teaspoon baking soda
05 - ¼ teaspoon salt
06 - 1½ cups buttermilk
07 - 2 eggs
08 - 2 tablespoons butter, melted
09 - 1 teaspoon vanilla extract

# Instructions:

01 - In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
02 - In a separate bowl, beat together buttermilk, eggs, melted butter, and vanilla extract until well combined.
03 - Gently fold the wet ingredients into the dry ingredients using a wooden spoon until just combined. Do not overmix - small flour lumps are acceptable.
04 - Lightly coat a poffertjes griddle with non-stick cooking spray and heat to medium temperature.
05 - Pour approximately 1 teaspoon of batter into each indentation of the griddle. Cook until bubbles form on the surface, then flip using a skewer or fork. Cook until golden brown, about 1-2 minutes per side.
06 - Remove from the griddle and dust with powdered sugar. Serve with fresh berries, syrup or other preferred toppings.
