In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and paprika. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and stir, allowing it to simmer for 2-3 minutes until slightly thickened.

Add the spinach to the skillet and cook until wilted. Return the chicken to the skillet and coat with the creamy sauce.

Garnish with fresh parsley before serving. Enjoy on its own or with a side of roasted vegetables.
