Cottage Cheese Enchilada Bowl (Print Version)

# Ingredients:

01 - ½ cup low-fat (2% milkfat) cottage cheese
02 - ⅓ cup rotisserie chicken, finely chopped
03 - 2 ½ tablespoons medium chunky salsa
04 - ¼ cup green bell pepper, chopped
05 - 1 teaspoon taco seasoning (sugar-free)
06 - 1-2 pinches cayenne powder
07 - 3 tablespoons Mexican shredded cheese

08 - ¼ cup chopped avocado

# Instructions:

01 - Chop rotisserie chicken and bell pepper into small chunks. In a food processor, pulse cottage cheese until smooth.
02 - In a small microwaveable bowl, add cottage cheese, chunky salsa, chicken, bell pepper, taco seasoning and cayenne powder. Stir until well combined.
03 - Heat on high in microwave for 1 minute. Remove and stir. Sprinkle the top with shredded cheese. Heat for another 30 seconds to 1 minute until cheese is melted and mixture is thoroughly heated.
04 - Top with chopped avocado or other desired toppings. Serve immediately while hot.
