Coconut Curry Chicken Skewers (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 1.5 lbs. chicken breast, diced into 1 inch pieces
02 - 1 cup full-fat canned coconut milk
03 - 2 tablespoons lime juice
04 - 2 tablespoons curry paste
05 - 1 teaspoon curry powder
06 - 1 teaspoon ginger paste
07 - 1 teaspoon garlic powder
08 - Pinch of cayenne pepper (optional)
09 - Kosher salt
10 - Fresh cracked pepper

→ For Serving

11 - Creamy peanut sauce
12 - Chopped peanuts
13 - Fresh chopped cilantro
14 - Thinly sliced green onion

# Instructions:

01 - Combine coconut milk, lime juice, curry paste, curry powder, ginger paste, garlic powder, cayenne, and a couple large pinches of salt and pepper in a shallow bowl.
02 - Add chicken to the marinade and gently toss to coat until chicken is completely covered. Allow to marinate in the refrigerator for 1 hour.
03 - Heat a large cast iron griddle pan or grill to medium heat.
04 - Thread marinated chicken pieces onto wooden skewers.
05 - Cook skewers on the grill pan in batches, for about 3-5 minutes per side or until the chicken is cooked through and a dark golden brown crust has formed on the outside.
06 - Serve with peanut sauce for dipping or drizzle with peanut sauce. Garnish with fresh chopped peanuts, cilantro, and thinly sliced green onions.

# Notes:

01 - Soak wooden skewers in water for 30 minutes before use to prevent burning.
02 - The chicken can be marinated overnight for enhanced flavor.
