In a bowl, combine lemon juice, zest, minced garlic, olive oil, rosemary, thyme, salt, and pepper. Add the chicken thighs and coat well. Let marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

Preheat your oven to 200°C (400°F).

Place the marinated chicken thighs on a baking sheet lined with parchment paper, skin-side up. Pour any remaining marinade over the chicken.

Cook in the preheated oven for 35-40 minutes, or until the chicken is golden brown and reaches an internal temperature of 74°C (165°F).

Remove from the oven and let rest for a few minutes before serving. Pair with steamed vegetables or a fresh salad.
