Chicken Thighs with Lemon (Print Version)

# Ingredients:

01 - 4 bone-in, skin-on chicken thighs
02 - 2 lemons (juice and zest)
03 - 4 cloves garlic, minced
04 - 2 tablespoons olive oil
05 - 1 tablespoon fresh rosemary, chopped
06 - 1 tablespoon fresh thyme, chopped
07 - Salt and pepper to taste

# Instructions:

01 - In a bowl, combine lemon juice, zest, minced garlic, olive oil, rosemary, thyme, salt, and pepper. Add the chicken thighs and coat well. Let marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
02 - Preheat your oven to 200°C (400°F).
03 - Place the marinated chicken thighs on a baking sheet lined with parchment paper, skin-side up. Pour any remaining marinade over the chicken.
04 - Cook in the preheated oven for 35-40 minutes, or until the chicken is golden brown and reaches an internal temperature of 74°C (165°F).
05 - Remove from the oven and let rest for a few minutes before serving. Pair with steamed vegetables or a fresh salad.

01 - For extra flavor, you can add lemon slices under and over the chicken before baking.
