# Ingredients:

02 - 1/2 cup granulated sugar
03 - 1/2 cup unsalted butter, softened
04 - 1/4 cup honey
05 - 1/4 cup chopped pistachios
06 - 1/4 cup chopped walnuts
07 - 1/2 teaspoon ground cinnamon
08 - 1/4 teaspoon ground cardamom
09 - 1/4 teaspoon salt

10 - 1/4 cup cream cheese, softened
11 - 1/4 cup powdered sugar

12 - 1/4 cup caramel sauce for drizzling
13 - Additional chopped pistachios and walnuts

# Instructions:

01 - Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
02 - In a large bowl, beat the softened butter and sugar together until light and fluffy.
03 - Incorporate honey into the butter-sugar mixture, mixing until well combined.
04 - In a separate bowl, whisk together the flour, cinnamon, cardamom, and salt.
05 - Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped pistachios and walnuts.
06 - Roll the dough into small balls and slightly flatten them with your palm. Place on the prepared baking sheet and bake for 10-12 minutes, until edges are golden brown.
07 - Allow cookies to cool completely on a wire rack.
08 - While cookies are cooling, beat the softened cream cheese and powdered sugar together until smooth.
09 - Spread a generous amount of cream cheese filling on the flat side of one cookie, and top with another cookie to create a sandwich.
10 - Drizzle caramel sauce over each sandwich cookie and sprinkle with additional chopped pistachios and walnuts.
