02 - 6-8 strips bacon, cooked crisp & crumbled
03 - 1 1/2-2 cups shredded cheddar cheese
04 - Salt & pepper, to taste
05 - 6-8 eggs
06 - Thinly sliced green onions, for garnish

# Instructions:

01 - Add a single layer of tater tots to a 12-inch cast iron skillet. Distribute the remaining tater tots evenly over top.
02 - Sprinkle the crumbled bacon, then the shredded cheddar cheese evenly over the tater tots. Season with salt and pepper to taste.
03 - If natural wells aren't obvious, use a spoon to create 6-8 divots depending on how many eggs you plan to use. Gently crack an egg into each well, carefully releasing to avoid breaking the yolks.
04 - Bake the totchos at 200°C (400°F) for 22-25 minutes, or until the egg whites are completely opaque.
05 - Remove the skillet from the oven and let rest for 5 minutes. Garnish with sliced green onions, slice into portions, and serve immediately.
