In a medium bowl, stir together the almond milk, eggs, maple syrup, and vanilla.

Add the wet mixture to the dry ingredients and stir until combined.

Add the diced apples and chopped pecans to the mixture.

Pour the mixture into the greased baking dish and press down to ensure the oats are soaked. Optionally, sprinkle additional pecans and apple pieces on top.
