Pour green Jello into the bottom of each serving cup, filling approximately 1/4 of the way full.

Refrigerate cups for about 2 hours, or until Jello layer completely sets.

Prepare pudding according to package instructions. Incorporate 2-3 drops of pink food coloring until achieving a bright watermelon-pink hue. If using watermelon extract, fold it in at this stage.

Layer the pink pudding on top of the set Jello until each cup is nearly full.

Place 4 to 5 chocolate chips on top of each pudding cup to represent watermelon seeds.

If desired, add watermelon gummy candies as a decorative and flavorful garnish.
