Bring 2 cups of water to a boil. Remove from heat and add 2 hibiscus tea bags or 2 tablespoons of dried hibiscus flowers. Steep for 5-7 minutes for desired strength. Remove tea bags or strain out flowers, then allow tea to cool completely.

Wash and slice 1/2 cup of strawberries. Blend with 1/4 cup of the cooled hibiscus tea until smooth. For a smoother texture, strain through a fine-mesh sieve if desired.

In a large pitcher, combine the remaining cooled hibiscus tea, strawberry puree, and 1/4 cup of lemon juice.

Add 2-3 tablespoons of maple syrup to the mixture and stir until completely dissolved.

Taste and adjust sweetness or tartness by adding more maple syrup or lemon juice as needed.

Pour over ice in glasses and garnish with fresh lemon slices, strawberry slices, and mint leaves if desired.
